Wine Director Louis Fabbrini selects small-production, naturally made wines, many domestic and others carefully sourced from Europe, pairing each with the same care Chef John Shields brings to sourcing ingredients.

These bottles are a deliberate departure from the expected. Regenerative farming, minimal intervention, and close relationships with producers aren't just elements of Louis's program; they are the program.
