At Smyth, wine pairings are more than a complement—they are a continuation of the story. Timing, not just taste, drives these pairings, and our Wine Director, Louis Fabbrini, makes sure each pour builds to a specific moment. This perfectly timed and uniquely paired progression transforms dinner into an immersive experience, reflecting the level of intention that defines Smyth as a three-Michelin-starred restaurant.

What sets Smyth apart is a deliberate departure from the expected. Our wine program centers on small-production wines from natural winemakers—many domestic, others sourced thoughtfully from across Europe—all selected with the same care we bring to our ingredients. Regenerative farming, natural winemaking, and deeply personal relationships with producers aren’t just aspects of the program…they are the program. Rather than defaulting to the expected prestige of classic Western European wines, we focus on integrity, intention, and connection at every level.

With our menus changing daily and ingredients shifting constantly, Fabbrini embraces the fluidity, rooting his pairings in storytelling over convention, and favoring emotional cadence over strict flavor-matching. Each bottle is chosen to echo the rhythm of the menu, with subtle, expressive pairings that evolve in tandem with its key moments.

Every wine we pour reflects a philosophy of integrity and connection, from vineyard to table.
