John Hess

Head Bartender, Smyth + The Loyalist

Hess began his career working in kitchens for ten years at fine-dining restaurants in Dayton, Ohio. From there he moved to Chicago where he worked for the Alinea Group at The Aviary and The Office. This is where he discovered his passion for bartending. Later, he joined the opening bar team at The Loyalist in 2016 and after a few months, Hess had the opportunity to open a live music cocktail bar in the Wicker Park neighborhood called Dorian’s. He then returned to work at The Aviary & The Office until October of 2020.

In April of 2021, Hess rejoined the team at Smyth + The Loyalist as Head Bartender. In this position, he takes his worldly knowledge of the restaurant industry and creates perfectly crafted cocktails to elevate guests' dining experience.

After a diversity of roles, Hess recognizes the importance of his restaurant journey and the significance of finding what you love to do. With this, he brings his great love of bartending to Smyth + The Loyalist every day.
